Light vs Medium vs Dark Roast: How to Choose Your Coffee

What roast level actually changes, and how Moodwell's light, medium and dark roasts compare on flavor, acidity and best brewing methods.

The short answer: roast level mostly changes flavor. Light roasts taste brighter and fruitier, medium roasts are balanced and sweet, and dark roasts are bolder, toastier and more chocolatey. None is better; it depends on what you like in the cup.

What roasting changes

Green coffee is roasted until it develops flavor. Shorter roasting keeps more of the bean's origin character (fruit, florals, citrus). Longer roasting develops caramelized sugars and toasty, cocoa-like flavors and tends to soften acidity. Medium sits in between. Roasters adjust time and temperature to bring out what each coffee does best, which is why two coffees at the same roast level can still taste quite different.

Does roast change caffeine?

Only a little, and not in a way you can count on. Dark roast tastes stronger, but that is flavor, not caffeine. Read dark roast vs light roast for the details.

Why does coffee taste like cherry or hazelnut?

Those are tasting notes, not added flavors. Compounds in the beans and the roast create aromas that remind us of fruit, nuts and chocolate. Our whole-bean coffees are 100% Arabica with nothing added. See what coffee tasting notes mean.

Frequently asked questions

Which roast is best for beginners?

Medium roast. It is balanced, sweet and works in almost any brewer.

Which roast is least bitter?

Light and medium roasts are less roasty. Any roast can taste bitter if it is over-extracted, so grind a bit coarser or shorten the brew if yours does.

Which roast is best for iced coffee?

Light roasts and fruity mediums stay bright over ice. Nutty and chocolatey mediums are smooth as cold brew.

Is dark roast healthier or less acidic than light roast?

Dark roast tastes less acidic. We make no health claims about any roast.

Can I mix roasts?

Yes. Many people keep a medium for everyday and a dark or light for when they feel like a change.
